Taste the Authenticity of Baja California cuisine
Celebrating the abundance of the farm, the sea and the ranch, Don Sánchez is a culinary experience resulting from the creative mind of award-winning chef Edgar Román and his infinite passion for Mexican haute cuisine.
With a great passion for art, chef Edgar Román is redefining contemporary Mexican cuisine. After 20 years of contributing, learning, and growing within the Los Cabos culinary scene, he still has a burning desire to create a unique platform where he can constantly explore his passion for Mexican food and culinary arts, fine wine, and hospitality. ; a place where foodies can go back to basics of high-quality, locally grown, farm-to-table ingredients that featured traditional Mexican cuisine, as well as modern techniques and a cutting-edge vision for Baja cuisine.
Here I let myself be carried away by authentic, daring and tasty dishes. Enjoying the company of chef Edgar Román, I tasted delicacies such as ‘surf and turf’ (taco with soft shell crab and rib eye pork rind ), Mexican gnocchis with huitlacoche and truffle and the delicious risotto with shrimp cooked in three different ways.
Play Golf among The Cliffs of the Coast
Quivira takes its name from an ancient legend about the seven cities of gold. The story is inspired by the historical event in which Mérida, Spain, was conquered by the Moors in 1150 AD. It tells the story of seven bishops who fled with sacred religious relics, hoping to protect them from the invading Moors.
According to legend, each of the seven bishops founded cities in distant lands. One of the cities was called ‘Quivira’ and the streets were said to be paved with gold. Such was the promise that ushered in the Golden Age of exploration when a group of men crossed oceans to discover the new world.
The white foam of the waves gleams in the hot Los Cabos sun as they crack against the towering cliffs of the Quivira Golf Club golf course. This is pure magic with a world-class Jack Nicklaus exclusive design – dazzling views and jaw-dropping drops from the tee to the fairway.
Between the sea, the desert and the blue sky of one of the most fascinating destinations in Mexico, this paradise for golf lovers is a delight for the senses. From the personalized service, the culinary excellence of the Clubhouse, and the beauty of this winding course, every detail reflects the luxury and sophistication that has made Quivira a Los Cabos icon.
Get Carried Away by the Culinary Art of Comal
At Comal, chef Yvan Mucharraz delights in taking a new approach to regional Mexican and Latin American cuisine for an imaginative menu that incorporates the freshest fish in the sea, from chocolate clams to spiny lobsters.
This avid traveler and native to Mexico brings years of experience training with some of the best chefs in the world, including Thomas Keller and Juan Mari Arzak , before leading the kitchen at other top-tier luxury resorts. Innovative and daring, its dishes are odes to good living and good eating, making each moment a sensory adventure.
The restaurant’s name, located at Chileno Bay Resort, comes from a cast iron skillet style in use for centuries in Mexico, and often passed down through generations in the same family. Comal is rooted in the authentic and traditional, but injected with its own modern and inventive spirit.
The sky constantly changes color, playing with thousands of pink, reddish and purple hues, contrasting with the white foam of the waves of the Sea of Cortez as they caress the imposing rocks of the bay. A moment of unrepeatable magic, I let myself be carried away by the exquisite cuisine of the beautiful and luxurious Comal restaurant.
Dive in “The World’s Aquarium”
Another exclusive activity in Los Cabos is diving in Cabo Pulmo, known as “the aquarium of the world.” Under the guidance of expert guides you can immerse yourself in one of the largest and most diverse coral reefs in North America.
It is an activity that encourages a healthy interaction between humans and the more than 800 species of marine life that inhabit the Sea of Cortez. Here we learn diving techniques and we can enjoy encounters with animals such as dolphins, whale sharks, sea turtles, among others.
Located on the east coast of the Baja California Sur Peninsula, two hours away from San José del Cabo, Cabo Pulmo is a protected natural area designated a World Natural Heritage Site by UNESCO, one of the most important achievements of ocean conservation and the only area of hard coral reef in the Gulf of California.
Cabo Pulmo is the perfect example of ecotourism, ideal for those looking for the quieter and more natural side of Los Cabos. In Cabo Pulmo are five of the seven species of sea turtles that are in danger of extinction in the world, as well as one of the largest collections of sharks, including bull sharks, tiger sharks, hammer sharks, blacktip and white sharks. This eco-destination is remote and unspoiled, perfect for those seeking out-of-the-ordinary adventure.
